Instructions
In the stand mixer bowl (or large mixing bowl), combine the warm water, sugar, and yeast. Let sit for five minutes until the yeast is foamy. (IN TEXT Combine the warm water, sugar, and yeast in the stand mixer bowl (or large mixing bowl). Let sit for five minutes until the yeast is foamy.)
Mix the grated parmesan cheese, Italian cheese, and garlic powder in a small bowl. Set aside.
Add the all-purpose flour, olive oil, and salt. With the dough hook attachment, knead on low speed for five to ten minutes. The dough should be a little sticky but still manageable. If it is too sticky, add a little extra flour one tablespoon at a time, and keep kneading on low for another five minutes.
First Rise: Oil a medium bowl or container and place the bread dough in it. Cover and let rise for 30 to 45 minutes until doubled in size.
Shaping: Place the dough on a floured work surface. Divide dough into four dough balls and let rest covered for five minutes (this will make it easier to shape into logs). Afterward, shape each dough ball into an 8" baguette log. Place on a baking sheet lined with parchment paper.
Italian Herbs and Cheese Topping: Sprinkle the seasoning on top of each loaf.
Preheat and Second Rise: Preheat the oven to 375°F (190°C). Set the oven rack in the middle of the oven. Cover the baguette logs and let rise for 30 minutes.
Score: Uncover the baguettes, they should have risen. With a bread lame, a sharp knife, or scissors, score the top of each baguette.
Bake: Bake on the center rack for 20-25 minutes or until done and golden brown on the outside. Bread is done baking when the internal temp reaches 195°F (90°C).
