In a large bowl, add the flour, sourdough discard (or active starter), water, salt, and instant yeast.
With a spoon, mix all of the ingredients until you see a shaggy dough form. This dough will not be smooth. However, you will know when you are done mixing once there are no dry bits of flour left.
Cover the bowl with plastic wrap and place in a warm spot at room temperature. Let the dough rise for 1-2 hours or until doubled. While the bread dough is rising, preheat your oven to 450F. Make sure to place your Dutch oven or bread oven in the oven while it is preheating.
Take a piece of parchment paper. Sprinkle rice flour or semolina flour on the parchment paper. Place the sticky dough onto the floured surface of the parchment paper.
With wet hands, pinch the top of the sticky dough at the top and shape it into a round bread loaf dough. Do not worry about making it perfect. Cut the sticky dough on top with a pair of scissors or a bread lame. If the top of the dough is too sticky to cut, then do not worry about cutting it.
Place the dough and parchment paper into the Dutch oven or bread oven. Bake it covered for 25 minutes. Afterward, take the cover off and bake the dough for 10-15 minutes or until golden brown.
Take the bread loaf out the oven and let rest on a wire rack until it is cool.

Bake in a Dutch oven to get an artisan-style crust. By baking in a Dutch oven or bread oven, you will get a sourdough discard bread that resembles the traditional sourdough bread.
Use a bread pan if you would like to make sourdough discard sandwich bread, Make sure to oil the sides so that the bread does not stick to the bread pan. For this, you can use olive oil, coconut oil, avocado oil, and even butter.
This dough is STICKY!!!! Use wet hands when handling this dough. The water on your hands will help prevent the dough from sticking to your fingers.
For best results, you should wait for the homemade bread to cool completely to room temperature before slicing. That is because the inside of the bread is still cooking even at room temperature! However, if you cannot wait, you can slice the loaf of bread while it is still warm. It is perfectly safe to eat. After all, fresh bread is delicious!
