What is Jersey Mike’s Oil And Vinegar aka “The Juice”?
Jersey Mike’s oil and vinegar is called “The Juice”. That restaurant sure does LOVE to get creative with their names, haha!
According to the Jersey Mike website, The Juice is “Red wine vinegar and an olive oil blend. It’s how a Jersey Mike’s sub gets its exquisite zing. It’s how bites get boosted, and a great sub becomes an even better one. The Juice adds that certain something extra.”
Their oil and vinegar mixture is the secret to a great sandwich. It adds the perfect tanginess and nice flavor to any of the Jersey Mike’s subs.
Ingredient List
To recreate this oil and vinegar dressing, all you need is a few simple pantry ingredients that you already have at home.
- Olive Oil: I use 100% pure olive oil. You can create the olive oil blend at home which is one part olive oil and three parts canola oil. However, using pure olive oil will result in a much more flavorful mixture.
- Red Wine Vinegar: Any red wine vinegar will do.
- Salt (optional): I used kosher salt. Completely optional. I add salt because I use this “juice” to put on other foods and not just my homemade subs.
How To Make Jersey Mikes Oil And Vinegar Recipe At Home
I searched for current and past Jersey Mike’s employees online during recipe research. I figured that since they work(ed) at the restaurant, they would be the best source to trust to try to replicate the oil and vinegar recipe at home.
I found multiple statements from past employees similar to this one:
“JJ’s is 1/3 cup of red wine vinegar, a tsp of salt and a cup of olive oil. Real simple.”

Step By Step Instructions
This recipe is SO easy!
Step 1: Pour vinegar and olive oil into the same jar
Step 2: Add a teaspoon of salt
Step 3: Close the jar and shake until emulsified
Step 4: Use on any sub your heart desires!
Recipe Tips For Success
- Use high-quality ingredients: A sub is only as good as the ingredients. Make sure to use the highest quality you can find. It might cost an extra couple dollars but trust me, it will be worth it.
- Store Oil And Vinegar Mixture in A Bottle: Since vinegar is a liquid and oil is a fat, the two ingredients will separate overtime. A benefit of storing it in a bottle is that you can shake it up by hand to combine the ingredients again.
Make It “Mike’s Way”
Ahh, the names that Jersey Mike’s gives its ingredient combinations!
” Mike’s Way” is the (kinda) fancy way of calling their signature sub sandwich combination. This combination consists of iceberg lettuce, tomatoes, red onion, The Juice (the olive oil and vinegar blend from above), salt, oregano, and optional black pepper.
This combination of vegetables is the blueprint to making authentic east coast-style subs.

What To Serve with Jersey Mike’s “The Juice”
- Bread: You can use whatever Italian roll your heart desires. If you want to go the extra mile, bake your own bread! My rosemary parmesan bread recipe is amazing with this oil and vinegar duo.
- Seasoning: Salt, pepper, oregano, and Italian seasoning.
- Cheese: Parmesan cheese or provolone cheese. Maybe even cheddar cheese. I’d stay away from nacho cheese.
- Italian Cold Cut Sub: Consists of a variety of Italian meats. The zesty tang of “The Juice” is perfect with this sub! I eat this all the time. Check out how to make Jersey Mike’s Original Italian Sub at home but better.
- Any Club Sub: Jersey Mike’s club sub has turkey, ham, provolone, applewood smoked bacon, and mayonnaise.
- Salads: Leafy green salad and pasta salad!
