According to the Jersey Mike website, The Juice is “Red wine vinegar and an olive oil blend. It’s how a Jersey Mike’s sub gets its exquisite zing. It’s how bites get boosted, and a great sub becomes an even better one. The Juice adds that certain something extra.” 

Their oil and vinegar mixture is the secret to a great sandwich. It adds the perfect tanginess and nice flavor to any of the Jersey Mike’s subs.

To recreate this oil and vinegar dressing, all you need is a few simple pantry ingredients that you already have at home.

  • Olive Oil: I use 100% pure olive oil. You can create the olive oil blend at home which is one part olive oil and three parts canola oil. However, using pure olive oil will result in a much more flavorful mixture.
  • Red Wine Vinegar: Any red wine vinegar will do.
  • Salt (optional): I used kosher salt. Completely optional. I add salt because I use this “juice” to put on other foods and not just my homemade subs.

I searched for current and past Jersey Mike’s employees online during recipe research. I figured that since they work(ed) at the restaurant, they would be the best source to trust to try to replicate the oil and vinegar recipe at home.

” Mike’s Way” is the (kinda) fancy way of calling their signature sub sandwich combination. This combination consists of iceberg lettuce, tomatoes, red onion, The Juice (the olive oil and vinegar blend from above), salt, oregano, and optional black pepper.

  • Bread: You can use whatever Italian roll your heart desires. If you want to go the extra mile, bake your own bread! My rosemary parmesan bread recipe is amazing with this oil and vinegar duo. 
  • Seasoning: Salt, pepper, oregano, and Italian seasoning.
  • Cheese: Parmesan cheese or provolone cheese. Maybe even cheddar cheese. I’d stay away from nacho cheese.

To store, place the oil and vinegar mixture into a glass bottle, dressing bottle, or mason jar. No need to refrigerate! This will last at room temperature for two months.
